Light Valentines evening meal

Grilled Salmon Darn with Mango and Lime Salsa
1tsp finely grated fresh ginger
Finely grated juice and rind of 1 lime
Small bunch of coriander chopped
½ Red Chilli chopped and deseeded if preferred
1 Salmon Darn per person
Mango and Lime Salsa
½ firm ripe Mango peeled, stoned and diced
6 cherry tomatoes cut into quarters
1 spring onion finely chopped
2 tablespoons of lime juice
½ Red Chilli deseeded and chopped
Put the ginger, lime zest & juice, coriander and half the chilli into a blender to make a rough paste. Rub the paste over the salmon and heat under a preheated grill for 4-5 minutes or until cooked and slightly blackened, turning over. Make the salsa by adding all the ingredients in a small bowl and mix well.
Serve the salmon straight from the grill with the salsa. Serve with baked potato or some brown rice.
Valentine Pudding
Strawberry Sorbet (makes one large tub) so plenty of servings left.
50g caster sugar
150-200mls buttermilk
Punnet of frozen Strawberries
1 Square of good quality dark 85% chocolate
Blitz everything in a food processor and you have an instant dessert. Top with fresh strawberries and 1 grated square of dark chocolate.
Valentine Cocktail
½ Juice of a lemon. ½ shot of Cointreau with ½ shot of vodka. Add in Soda water and serve in a Martini glass with a skewer of Strawberry and Orange slice on top.
Then what?
Believe it or not, exercising after an evening meal is a great way of burning calories but nothing too strenuous. A light walk after dinner will suffice and a great way to actually TALK to each other.
